Baked Salmon with Dill, Mashed Sweet Potatoes and Garlic Asparagus

This entire dinner took me 5 minutes to prep and 15 minutes to cook.I prepped and cooked everything at the same time.

For the salmon:

Ingredients:
1 filet of wild caught salmon, handful of dill, half of a small lemon (cut into slices), olive oil, salt and pepper

Prep:
Place filet on aluminum foil or a baking sheet over a teaspoon of olive oil. Sprinkle salt and pepper, place dill (enough to cover the filet) and slices of lemon on top of the fish.

Cook:
Cook the filet in a 350 degree oven for 15 minutes or preferred doneness.

For the sweet potato:

Ingredients:
Half of a medium sweet potato or small sweet potato, salt and pepper, water

Prep & Cook:
Peel and cut the sweet potato into inch long cubes, sprinkle salt and pepper, add to boiling water on high heat. Cook for 15 minutes or until the cubes are tender enough to mash.

For the asparagus:

Ingredients:
7 spears of asparagus, olive oil, 1 clove of garlic cut into slices, salt and pepper

Prep & Cook:
Add about a table spoon of olive oil in a skillet with the garlic. Heat to medium to high heat then place the asparagus. Cook for 15 minutes turning the spears as it cooks.


This dinner was absolutely delicious and if you are busy like me, it is perfect!!!
